L.L.P. (Lazy Lemon Pie)

Sunday! This week flew by and totally got away from me, it was full of deadlines, and schedules and believe it or not a work trip! I spent all day yesterday recuperating from the rush of it all – down time is such an important thing.

When life gets too busy for me it’s important to hide away for a bit, to breathe deep and to do things that are truly good/healthy for myself. That’s why I though’t it be perfect to make/share my Lazy, Lemon Pie…. it’s a healthy dessert that leaves you feeling full and satisfied.

I shared this recipe for the Spring Issue of 1905 Magazine (@1905magazine) and it’s been on my favorite ‘to make’ list sense.

What you need:

Base  

2  ½ cups desiccated coconut

1 egg

3 tbs coconut oil

½ tsp vanilla powder (check your local health food store)

½  tsp cinnamon

½  tsp liquid stevia

Pinch of salt

 

Curd

¼ cup fresh lemon juice

6 tbs coconut oil

3  eggs

Zest of 2 fresh lemons

½  tsp liquid stevia  

 

What you do:  

  1. Preheat oven to 300°F. Mix base ingredients in medium bowl until dough-like and sticky.  
  2. Press coconut base into a 9 inch pie pan and build sides up to ½ inch thick. Be sure to pack down well so the base it totally firm. Bake until golden brown, about 20 minutes.
  3. Once crust is cooling, make curd on stovetop:  Add eggs, coconut oil to saucepan and whisk until oil is melted.  ***Note: stir constantly to avoid clumps. Once oil is melted, add lemon juice, lemon zest and stevia stirring until mixture becomes thick (roughly 5-10  minutes).
